Last week, USA Network’s popular series, Royal Pains, aired its season premiere.  One of the main characters in the show is actually the setting: The Hamptons.  Throughout the episodes you’ll view scenic shots of waterviews, often with yachts enjoying the majesty of Long Island’s waters, pristine beaches, lush greenery, historic lighthouses and, of course, the lavish lifestyle that can only be found in The Hamptons.  Well…that’s mostly true.  You see, many of those heavenly views were not shot in The Hamptons.  Rather, they were filmed in the heart of Netter Real Estate‘s home; Suffolk’s South Shore.

The site also has a four-acre corn maze.

Hours:  9 a.m.-5 p.m. daily, closed Tuesdays, late May-late December.

Sometimes the kids will even share some of the apples they pick.

Gorgeous, delicious and healthy...you can't go wrong with apples!

Here are some tips on what to do once you’ve picked your apples:

Don’t wash apples until just before using to prevent spoilage.

Keep apples cool after picking to increase shelf life. A cool basement is ideal, but the fruit/vegetable drawer of a refrigerator will work, too. Kept cool, fresh-picked apples will generally keep weeks, but it DOES depend on the variety. Red and Yellow Delicious apples do not keep well, for example; but Rome, do! High humidity helps to keep the apples from shriveling, but don’t let them get actually wet. A wet towel placed nearby helps to keep the humidity up. A refrigerator is fine for small quantities of apples. Boxed apples need to be kept in a cool, dark spot where they won’t freeze. Freezing ruptures all of an apple’s cells, turning it into one large bruise overnight.

Nutrition:

• One-half cup of apples is only 42 calories.
• Apples contain no cholesterol or fat and are also low in calories.
• Apples are high in dietary fiber, Vitamin A and niacin.
• They contain iron and other trace minerals and are a fair source of Vitamin C.
• Apples are ranked No. 1 in antioxidant activity compared with 40 other commercially available fruits and vegetables. That      means a serving of apples has more of the antioxidant power you need to fight aging, cancer and heart disease.

Paula Deen is not generally known for her healthy meals but here are some great tips and tasty veggie recipes for you to try on your grill that come straight from the Paula Deen Test Kitchen…

Grilling Seasonal Vegetables

Grilling fresh seasonal vegetables is a not only a healthy way to prepare them, it’s also a snap! Why dirty up another bowl, pan or dish after a long day? Not to mention the ease and speediness in which dinner is s ready and the cost effectiveness of grilling a side dish. The exclamation points are the appealingly sweet smoky flavor that a grill imparts and the bright colors left behind.

Here are some handy grilling tips for preparing vegetables along with a couple of recipe ideas. We hope the next time you have a chance to pick vegetables fresh from the garden or your local farmers market you use these tips and cook them on the grill.

Vegetable Grilling Tips:

** Spray the grill with non-stick cooking spray prior to heating the grill to help make clean up a snap.

**Make sure your grill is medium hot. One way to test this is to place your hand over the grill. If you can hold it there for 4 seconds, the fire is medium hot.

**Prevent your vegetables from drying out on the grill by soaking them in cold water first. 

**Vegetables should be cut to expose the most surface area to the grill.  This helps them to cook quickly. Also, cut the pieces equal in size so they will cook evenly. For example: Cut your squash and eggplant into strips, not rounds, of the same width. 

**Use kosher salt or sea salt on your vegetables to bring out extra moisture. Seasoning with salt and pepper both before and after grilling helps to make them sweet and full of flavor.

**Someone in the family doesn’t like grilled vegetables? Try this trick. Sprinkle a little sugar on the vegetables half way through the cooking. This gives them a wonderful caramel flavor. 

**Use tongs to turn your vegetables on the grill instead of a fork. You don’t want to puncture them, as it will release the moisture.

**Smaller vegetables such as cherry tomatoes (we’ll just pretend and call this a vegetable) and small mushrooms might fall through the grill and should be skewered first. Thick onion slices should also be skewered all the way through to keep them whole while grilling. I like to use metal skewers instead of bamboo since they don’t burn and I can reuse them.

**Because vegetables lack fat, they need oil or some sort of liquid marinade to prevent them from burning and sticking to the grill. Brush them with a vegetable oil or flavored oil such as a prepared salad dressing prior to placing on the grill. You can also marinate them in a prepared dressing or your own marinade recipe.

Recipes:

Try this sweet simple summer marinade recipe:
1 cup fresh orange juice
1 tablespoon soy sauce
2 teaspoon fresh ginger, minced
2 garlic cloves, minced
Juice and zest of 1 lemon

In a medium mixing bowl, whisk together all ingredients. Add sliced vegetables to the bowl, toss to coat and let marinate for 30 minutes. Remove from marinade and place on a medium hot grill to cook.

Or this simple flavored basting oil:
1/2 cup canola oil
1/2 cup olive oil
juice and zest from 2 lemons (substitute any citrus you have on hand)
3 teaspoons fresh rosemary, chopped fine

In a small mixing bowl, combine all ingredients and allow to stand for 10-15 minutes so flavors will infuse. Brush on vegetables and place on grill to cook.

Grill Times and Techniques:

Corn on the cob:     Gently pull back the husks but keep them intact. Remove the silks and soak the cobs in cold water for 30 minutes. Dry and brush with butter or make your own compound butter by mixing together 1/4 cup butter (room temperature), 2 teaspoons ground chipotle pepper, and zest of one lime. Fold the husks back down over the kernels, twist the ends and place on the grill for 8-10 minutes, turning every two minutes. Serve with extra Chipotle, Lime Butter or have fun and invent other compound butters.

Asparagus:     Cut off ends and soak in water for 30 minutes. Brush with oil. Grill 2-3 minutes, or until tips begin to brown.

Eggplant:     Cut lengthwise into 1/2” slices. Brush with oil. Grill 2-3 minutes per side.

Garlic:     Cut the root end off of a whole bulb. Brush with oil and place cut side down on the grill. Grill 10 minutes, or until the skin is a dark brown.

Onions:     Remove skin and cut into 1/2 inch thick slices. Run a metal skewer through the entire slice.  Brush with oil. Grill 5 minutes per side.

Bell Peppers:     Cut the pepper in half from top to bottom. Remove stems, seeds and ribs. Brush with oil.  Grill 3-4 minutes per side.

Zucchini or Summer Squash:     Slice lengthwise into 1/2 inch thick slices. Brush with oil. Grill 4-5 minutes per side.

Cremini or Button Mushrooms:     Wipe clean with a dry cloth. Thread on a metal skewer and brush with oil. Grill 8-12 minutes, turning every 2 minutes. 

Romaine Lettuce (for a quick grilled Caesar salad):     Cut in half lengthwise. Brush with oil and place cut side down on the grill. Grill 2-3 minutes.

This is proof healthy eating can be delicious, too.

In this economy, many of us have scaled back on things.  Dining out for many of us is among those things we wish we could do more often.  With Long Island Restaurant Week, we can indulge our palettes, guilt -free!  Each participating restaurant offer a three-course prix fixe that includes at least three choices of each course – three appetizers, three entrées, three desserts for $24.95.  Because each restaurant is unique and there are so many participants, there is an enormous variety of of delicious dishes to choose from.  Each restaurant may choose to offer additional items to the special menu that are higher priced but there will always be at least three non-supplemented choices on the menu.

When people say “Islip,” often what comes to mind is the Town of Islip and some of the fantastic villages and hamlets in it like West Islip, Bay Shore and East Islip.  But what about charming Islip Hamlet?  Netter Real Estate believes that it deserves some of the spotlight, too.

October brings to the Islips many Striped Bass Fishing Tournaments.  The weekend of October 23rd-24th, there were three.  The one Dave Sanders, Licensed Real Estate Salesperson at Netter Real Estate, tries to fish every year is the Kismet Tournament.  This year was no exception!   It’s always held the week before they close for the season.  The second one is hosted by the East Islip Anglers Club and is exclusive for Anglers of their Club and the third of the weekend is the Viking Tournament.   All three tournaments were held on Saturday, October 23rd, bringing the Bay and Fire Island Inlet alive like it was summer again with center consoles and sport fishing boats!

The Kismet Tournament has six categories: First, Second and Third largest striped bass and bluefish and also a Calcutta for the Largest striped bass.  There is a limit of boats allowed to enter this tournament but it is unlimited to surf fisherman.

Dave Sanders, Licensed Real Estate Salesperson at Netter Real Estate (AND quite the fisherman) at the Kismet Striped Bass Tournament with his catches of the day! WOW!

There were 128 contestants this year.  The Largest Bass was a whopping 28 pounds!  Dave Sanders thought he may have been weighing in the 15.5 pounder that he landed — which is a mighty catch for sure!  Alas, as when he retuned to the dock, the fish that had been weighed in were two 22 pounders and one 15.1 pounder.  Most of the boats seemed to be in by the time Dave returned and it was already 3:50 p.m.  The cut-off time for weigh in was 4:00 p.m. and he had one of the end slips which takes a few minutes to walk back to…well, it was soon clear that Dave would not be weighing in a fish this year.   But that’s okay because after the weigh in is when the party starts!

Larry Cole got on the megaphone and distributed the winning cash prizes and then continued to the door prizes – which are always very generous gifts donated by local merchant fisherman.  This year Netter Real Estate and Dave Sanders donated a beautiful Shimano rod and reel setup; a sure surprise for the lucky winner!  There  were also many other wonderful, generous prizes including a beach bike, assorted rod and reel combos, nets, tackle and the list goes on.

The beer was flowing from the second you reached the corner of the Kismet Inn.  Then after the raffle finished, it was time for more beer, cocktails and the infamous buffet put together of all the fish caught.  Someone even made a homemade smoked bluefish dip! It was  just out of this world! 

We just have God to thank for the weather.  It was a very mild and calm day for the Kismet Tournament.  Dave will tell you, most of his memories of tournaments past have been cold and rough…yet always enjoyable enough to bring him back the following year. It must be the hospitality of the Kohl family who runs the Kismet Inn!

Thanks Larry, Joyce and family for providing such an awesome end of season event!  Dave said “The toasted buttered rolls hit the spot when we entered for sign up at 6:30 a.m.  Thank you!  Thank you!  Thank you! It was a great day.”

Feeling Itchy?  It’s poison Ivy time!

These plants contain an oily substance called URUSHIOL that causes a red, bumpy rash in many people.

If you think you have come into contact with one of these plants, wash with soap and water  as quickly as possible.  If you do this, you may stop a reaction.  If it is longer than that, the oil has already penetrated the skin and washing it will no longer prevent the rash, but it may help reduce the severity.

Treatment  Options:

1. OTC  cortisone cream 2-3 times a day
2. Anti-itch lotion such as calamine lotion
3. OTC antihistamine such as Benadryl or Zyrtec
4. Take an oatmeal bath

But see the doctor if the over the counter products don’t work, blisters are oozing, or if you develop a fever of over  100° F

IvyBlock (ivyblock.com) is the only FDA approved OTC barrier cream.  Use like a sunscreen.

The key to preventing that rash is knowing  what these plants look like and the avoid them!
